My husband and I ate in Per Se last night. The experience exceeded our already high expectations: perhaps the best meal we've ever eaten in a restaurant, comparable to Taillevant in Paris. It was also the most expensive at a little over $600 for two with tax, tip and a $75 pp wine pairing.
However, what impressed us both was how extraordinary the service was. Not in a formal, remote style, but warm, friendly, enjoyable. The waitstaff was very knowledgeable about each and every dish - smiled every time they presented a course, and was totally professional in replacing flatware, dishes, glasses as needed.
Special kudos to Bill,(?), the sommelier. He made it very easy: he asked us to tell him about how much wine we wanted to drink, (a bottle or a bottle and a half, or whatever quantity), how much we would care to spend, and if we were adventurous or if there were some things we wouldn't care to drink (he paired a cold sake with the oysters and pearls - wow!), and he proceeded accordingly.
Anyway, the evening was fabulous. I wanted everyone to know that this is a very different kind of service. Enjoy.
