I have tried to search past posts and couldn't find an answer to this question. I am going to be cooking a heritage turkey this year and have had really good results in the past with cooking turkey quickly and at a high temperature (425-450). I would also like to do a butter rub on and under the skin of the bird. My question is, can you combine both of these things without having the butter burn or the skin of the bird burn?
