For some reason I have ended up with about 15 pounds of potatoes and there are only two of us that live here. I have 5 lbs of medium sized red potatoes, about 4 lbs of yellow potatoes, and 6 lbs of fingerling and assorted new potatoes.
I know i can make gnocchi, latkes, bread and various potato side dishes, etc. But those are things to make and eat right away. Aside from soup (there is a pot of potato leek soup on the stove right now). What other things can I make and freeze? Has anybody tried pre-cooking either by boiling or baking and then freezing so they can be used as home fries, gnocchi, bread, etc.at a later date?
