Mom made a "wilted cabbage" that was great with pork,
had a sweet and sour base, and bacon bits. I have tried to replicate as below, but it ain't quite the same(or is it ever).Any variations?

Render about 8-10 slices of bacon that have been cut into about 1/2 inch pieces.
Remove the bacon and add about 1 small head of shredded cabbage to the hot bacon fat.
After the cabbage has wilted, add about 1/2 cup of white vinegar and about tablespoon of sugar.
Add the fried bacon bits and allow to
steam on medium heat about 10 minutes.
