I spent a lot of time out on the North Fork of Long Island years ago, and there is a wonderful bakery/pie shop/farm stand way out east called Briermere's Farms. Besides having the best fruit pies, they also have great breads and cookies.
One of the cookies that they sell there is hands down my favorite. They call it "Wespennester" and it is a cross between a meringue and a crumbly cookie. Cocoa flavored, studded with nuts (walnuts, methinks) and has that unmatched combination of ethereal, melt in your mouth meringue with the earthy density of the finely chopped nuts, all with a hint of chocolate.
I crave these cookies, which isn't good because I now live on the other coast. If anyone has a recipe for a cookie that resembles these, PLEASE share!
