In January of 2005, a small French bistro opened in Saxtons River, Vermont (2 hours from Boston, just west of Keene, New Hampshire, and 5 miles off I-91 at Exit 5). Pascal Nebois makes the most delicious sausages, terrines, and pates this side of France. He uses only organic meat and has a creative and varied menu. It is definitely worth the small detour off of I-91, and is located on Rte. 121 between Bellows Falls and Grafton.
