I'm thinking of taking veggie quinoa cakes to an office potluck. At home I enjoy them plain or with a poached egg on top for brunch, but I'm looking for another way to serve them at the office.
The cakes are made with (usually leftover) veggie quinoa - quinoa w/ leeks, carrots, zucchini, bell pepper, etc. Then I add egg, parm, fresh herbs and cayenne, form little cakes and fry. Sometimes I add some crumbled italian sausage, but I'm still debating whether to add that for the office party or not.
Any ideas on how I could serve these cakes at the office potluck? Maybe a sauce or salsa to go with them?
