The Fri Lunch Wine Gang headed down to Laguna today(weather was perfect) to CLAES's in the Hotel Laguna. We ordered a Tasting Menu a few days ago with Executive Chef David Mack(formally of the Ritz Carlton)Sous Chef John Dyer, Chef de Cuisine Joshua Gil. OMG, the most incredible lunch. Besides the ambiance(Waves , Porpoises, Bikini's)the view was fantastic.
Menu: House Cured Duck Proscutto w/fig marmalade, Butter Roasted Langestines, w/stewed leeks and truffle cream, Chilean Seabass nicoise provencal, Noisettes of Colo Lamb w/Harissa Demi Glace w/ Roasted Roots, Chef's Selection of Imported Cheese w/ Maytag Cheese Souffle.(60-pp food only)
Everything was wonderful and we are returning in a couple of weeks. BEST FOOD IN LAGUNA as of TODAY, look out Montage!
