Green Food

I just got recruited to basically be the cook for my friends St. Pattie's day bash (because he's miserable at it and I'd rather just make the food than have to eat really anything that comes out of his kitchen), so I need some help. He wants everything to be at least partially green (and I mean everything...with the exception of the Guiness (though there is going to be cruddy, dyed-green keystone too)). I was thinking of just making a bunch of bite-sized food and just putting it on a table in the living room. I can make veggies and what-not, but does anyone have some suggestions for appetizer-sized meat dishes that could incorporate something green in them?

  1. And you don't think green colored meat would be off-putting to say the last?
    Of course you could always cover a ham in chopped parsley. A Lot of chopped parsley.
    Then there's the weird green (deviled) eggs that can be added. Celery sticks stuffed with green tinted spiced goat cheese. I think I'll stop now. The visual is too......

      speaking of parsley, flank stank w/ chimichurri sauce would be yummy and not artificially green.

      crackers w/ a pesto cheese spread might be good...

        Good one. I love chimichurri sauce.
        I just found a recipe for green potato pancakes with green horseradish sauce. Guacamole would go here too.

    2. You can make green salad oil in a processor with chives, strained through a coffee filter.

      I wouldn't go too far with this idea: shades of my Mom using dyes in cookies and cakes, years ago.

      1. How about a Spanakopita filling, but put on puff pastry instead of inside phyllo? or maybe ham and spinach mini-quiche. Maybe pesto based pizza (with meat of choice).. can just use tortilla's to make them simple. Or use tortilla's to make a pesto (or spinach) - cheese - chopped ham (or bacon) roll-ups.

        1. If you don't feel like using artificial coloring of any kind, try using a Tabasco green pepper sauce to dress up your food, or try a salsa made solely of tomatillos (and perhaps green onions). Possibilities are limitless if you can use chards, lettuce greens, etc. Consider those too. Green peppers are also a plausible option.

            1. I just made salsa verde tonight. Found the recipe on Epicurious. Really good. Are there green taco chips? I think so.... Of course you are making jello shooters! There is a cheddar with green veins. You could make a spicy feta dip with roasted green bell peppers rather than red. Also on Epicurious. Watercress looks like shamrocks.
