Tcho: New chocolate factory at SF Pier 17, opening in late spring '08

Can't wait for Tcho to open late Spring 2008: It'll be the only chocolate company in San Francisco that makes chocolate confections starting with cacao beans. There will be a tasting room, store and factory tours.

How to buy: "Chocolatey" is its debut bar, which is still in beta, or test, phase. That means that customers can buy the beta bar, and comment on their likes and dislikes, before the final formulation of the bar is decided upon. The 50-gram bars (about 1.8 ounces) are $4 each and are sold only online at www.tcho.com. The bars also will be sold at the factory when it opens to the public in late spring.     1. Great chocolate may be coming from this operation. I recently was given a sample of their chocolate (they're giving samples of various batches to get feedback). I found one sample (plain chocolate from Ghana) stunning, with fruit notes as good as the best of Scharffen Berger but without the need to chew each bite 20+ times to get the flavor. I gave them that feedback and hope that batch makes it to production.
