Favas from Mike's Truck Garden (Fulton)

My friend Annette, inspired by the 49¢/lb. fava beans at Mike's Truck Garden, made the first course shown below for each of us at Saturday's dinner. A leek was topped with a vinaigrette slurry of sundried tomatoes and capers. The favas were steamed and had lovely buttery texture, not a starchy one in the bunch. I loved having a pile of springy favas that someone else peeled and slaved over.

  1. Hi Melanie. Where is Mike's Truck Garden. I live off of River Road and I don't recall ever seeing a sign or anything. It's not the produce stand just past the poultry processor is it? And by the way, had fava's from TTT farms that were outstanding! Just wish favas weren't such a pain to peel.

      Hehe, I never knew the name of it either! Yes, it's that produce stand on the north side of the road (across the street from Egg Basket Market). I had to ask my friend the name of it, and she said she's been writing checks to "Mike's". It's been ages since I've stopped there myself . . . I miss the taco truck that used to park there.
