Chavela Preparada, Taqueria Jalisco in Salinas
Last week I had a very nice chavela preparada for my mid-afternoon "coffee break". Unlike other spots in town, this taqueria doesn't have any posters or menu card promoting chavela. Luckily I saw another customer with an icy mug and asked about it.
This is my favorite of the three versions I've tried. Made witha can of Tecate, the blend was far more winey with distinct red wine notes and a bit less citrusy. Crisp and juicy stalk of fresh celery. The perfectly poached prawns laced around the rim were halved, then draped on the rim and the tails curled over forward. Dabbed with a touch of Tapatio hot sauce, they were downright artsy.

As much as I loved the chavela here, I need to add that the chips and salsa were below average. The salsa was like regular ol' canned stewed tomatoes with no kick at all, plus had a weird thickened texture from gums or some additives.

Beer, wine, clamato (this is the secret ingredient), orange juice, carrot juice, lime, lemon, etc.

Ha! I took a couple straight on, but thought this one was far more interesting and showed off the shrimp manipulation much better. Got your attention!

Al pastor taco was not good, and as noted before the chips and salsa were below average.
And, I need to correct the address, which is 810 E. Market Street. Jalisco has another location on N. Sanborn Road, but I've not tried it.

The place I had the best chelada preparada was Los Altos, also in Salinas. They give you a big frosty salted mug, I would have to say it was about a liter. The drink was decribed to me as: tecate, wine, clamato, and tapatio. It had 6 shrimp circling the rim with a large carrot and celery stalk, plus all the lime you could want.
The food was also amazing here. The helpings could easily feed two people and were prepared beautifully! sizzling right in front of you.
Check it out when you get the chance... maybe you'll like the salsa ;)

Thanks for the post, always looking for a nicely done version. My parents know the owner, so I don't talk about Los Altos myself.
P.S. In Prague this summer, I liked the dark pilseners best too.
