Really great of you to support your wife in this... contrary to (what seems to be) popular opinion, lifestyle changes for diabetes is NOT something to be taken lightly.
I've been drinking Nestle for a while now. I'd suggest adding a little milk to it.
Overall suggestion for switching from bad-stuff-you-love to better-versions-that-don't-taste-as-good: stick with it. At first, when you still remember how good the full-fat/calorie version is, you will hate it. After a few weeks of sticking EXCLUSIVELY to the better-for-you version, you will forget how it used to taste and you will enjoy the new one just as well.

Swiss Miss Sugar-Free with Calcium (and splenda). Good stuff.

I like the swiss miss... and it's only like 25 calories a pack.
I really don't know the carb count on pure unsweetened chocolate, but you could always use that with splenda to make something yummy, if it works into the plan.

Has your wifes DR or nutritionist alerted you to the sweetener stevia? Stevia is a plant that is about 20 times sweeter than sugar and it does not raise your glucose levels and it is recommended for those with diabetes. I have been growing it for a few years, but you can find the powder at health food stores or natural food co-ops.
I applaud you for doing this for your wife. Having diabetes is life-changing and your support will mean so much to her, and your relationship.

I noticed they also sell stevia packets at Trader Joe's now. I personally am not a fan of the licorice-y flavor of stevia and prefer Sweet and Low (shh, don't tell anyone!)

I second the stevia. I make my hot chocolate with Droste cocoa, a teaspoon or so of sugar, a few sprinkles of stevia to full sweeten it, a dash of good cinnamon and a few drops of good vanilla. Divine, and the stevia saves so many calories. If you use about 1/3 sugar and 2/3 stevia, you will not notice an aftertaste. TJ's sells the pure stuff in a shaker bottle for $9.99. I use it every day in my chai tea, and one bottle lasts me for months and months. It's probably a better deal than the packets.

Much better than Swiss Miss, but also much harder to get in the US, is Cadbury's Highlights hot chocolate. Milk chocolate flavor has the richness and milkiness of a full fat Cadbury's chocolate bar, for only 40 calories a pack. You can order by mail at http://www.britishdelights.com/cadbur...
Good luck to you both.

Trader Joe's has a chocolate tea that my mother enjoys very much; she says that with a little half and half, it's great for a chocolate craving. I have only smelled the tea myself --it smelled of chocolate and coconut. I look forward to trying it.

I much prefer Yogi Tea's cocoa spice tea. It's got a much richer chocolate-y flavor.
I'm really not a fan of the TJ chocolate tea, which I assumed would be similar. It has far too much coconut flavor, and too little chocolate.

I use very dark or unsweetened chocolate, a little cocoa powder, and agave nectar with unsweetened soymilk and it hits the spot.

I Thank all of you for your very helpful suggestions. I will try most of the ideas suggested and report back what suits her particular craving best. Kind regards to all . . . Reid
