Summary

I live in Minneapolis and I love walleye. You can obviously make this with other types of white fish but if you can get some super fresh walleye you are in for a real treat. This is my take on the famous fish taco/ fish sandwich. I think that the tempura batter works perfectly here because of it’s light and crispy texture. If you have any questions feel free to ask me!

Instructions

  1. 1get your oil on a medium heat so it starts to heat up while you get everything ready.
  2. 2organize all of your vegetables, wash your lettuce, cube your avocado and sprinkle half the lemon on it.
  3. 3add the mayonnaise, 2 or 3 chipotle peppers (more if you want it spicier), a squeeze of lemon and some freshly cracked black pepper to a blender.
    4. cut up the fish fillets in big strips.
  4. 4read the back of the tempura box and follow the directions for making the batter.
  5. 5if you have a frying thermometer you want your oil between 350 and 400 degrees. If you don’t have a thermometer take a small onion dip it in the batter and drop it in the oil. If it starts bubbling up and frying right away you know your good. If it fizzles and seems to not react much to the oil wait another minute for the oil to get hotter.
  6. 6once you have your oil figured out fry all the onion rings for 2 to 3 minutes and let them dry off on paper towels and sprinkle them with a little salt when their still hot.
  7. 7then fry your fish which should cook in 3 to 4 minutes.
  8. 8put your fish on the paper towels and sprinkle them with salt.
  9. 9toast your buns or tortillas in a pan with some butter.
  10. 10put your chipotle mayo, lettuce, avocado and fish on the bun.
  11. 11

    EAT IT.

  12. 12If you feel like frying anything else up while you’ve got the tempura batter and oil go for it. You can literally get as creative as you’ve want I’ve fried avocado and thin slices of lemon. THE SKYS THE LIMIT.
