Ingredients (11)

  • 1/1/2 cups butter milk or plain yogurt
  • 4 large eggs
  • 1/2 cup sugar
  • 2 1/2 cups flour
  • 3/4 TBLS baking powder
  • 3/4 cup cooked sweet potato puree (canned or fresh baked)
  • 3 TBLS melted butter
  • 2 peaches
  • 2 plums
  • 1 cup grapes
  • 1/4 cup pecans

Summary

Top with fresh fruit! Nutrients per serving: 300 calories, 9 gms protein, 7 gms fat, 63 calories from fat, 4 mg saturated fat, 120 mg cholesterol, 2 gms dietary fiber, 99 mg sodium

Instructions

  1. 1Blend the first 7 ingredients well and let rest for 20 minutes.
    Make waffles in a waffle maker.

Slice the fresh fruits such as peaches, plums and grapes
Top with fruits and toasted pecans.
Add maple syrup to taste.
