Ingredients (6)

  • 10 lbs. grated potatoes - drained
  • 2 1/2 lbs. cooked potatos - mashed (can be prepared in advance)
  • 2-5 lbs. hamburger or ground pork (form into small meatballs in advance)
  • salt pork cut into 1/2" pieces (if using hamburger - press into prepared meatballs)
  • culinary cheese cloth pre-cut into 5" x 5" squares (or larger)
  • cheese grater


French Potato Dumplings


  1. 1grate potatos and mix mashed potatos with grated – add salt to taste
  2. 2using prepared meatballs, form into larger snowball like balls by covering prepared meatballs with potato mix – cover about 1" thick around ball
  3. 3place into center of cut cheese cloth and tie corners together diagonally
  4. 4drop into boiling water and simmer 3-4 hours until center meatball is cooked through
