Ingredients (12)

  • 2/3 c. sugar,
  • 1c. whole grain oat flour
  • 1 c. whole grain barley flour
  • 1/3 c. canola oil
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t salt
  • 1 t vanilla
  • 2 eggs
  • 3 Tbl soy milk
  • 5 very ripe mashed bananas
  • optional 1/2 c. chopped nuts

Summary

I’ve found that many whole grain recipes call for whole wheat flour, but my family didn’t like the taste so I began experimenting with other whole grains. I found that substituting 1/2 whole grain barley and 1/2 whole grain oat made a nice consistency and tasted better. My family is also dairy sensitive so I began experimenting with other liquids when milk is in a recipe. some times apple juice can be substituted and other times soy milk works.

Instructions

  1. 1mix all dry ingridence, (crush all lumps from oat flour )
  2. 2make a valley in the center and add wet
  3. 3allow to stand for 20 minuets before baking
  4. 4bake @ 350 degrees for 1 hr in a well greased large loaf pan.
