Chicken Breasts with Shallots and Green Beans

Ingredients (12)

  • 1 large Shallot sliced to a medium thin-ness
  • 1 Tbsp chopped Garlic
  • 1/2 lb String Beans cut into quarters
  • 1/2 lb boneless breast of chicken cut into chunks (preferably hormone and anti-biotic free)
  • 1 cup Chicken Stock
  • 1/4 cup Apple Cider Vinegar
  • 2 tsp Oregano
  • 2 tsp Rosemary
  • 1 Tbsp Unsalted Butter
  • 1/4 cup Heavy Cream
  • 1/2 cup grated Parmesan Cheese
  • Salt and Pepper to taste

Summary

I had these ingredients in my fridge and just started to chop and toss everything in and it all came together deliciously! I served it with Quinoa Angel Hair Pasta but it would also go nicely with any rice or grain.

Instructions

  1. 1Heat Extra Virgin Olive Oil in a medium sized, heavy bottomed, deep saute pan
  2. 2Add Garlic and Shallots and saute them until translucent
  3. 3Add Chicken chunks and brown them
  4. 4Add String Beans
  5. 5Pour in Chicken Stock, Apple Cider Vinegar and herbs and butter and cover the pan
  6. 6Steam Chicken and String Beans until chicken is cooked through and bounces back to the touch (about 5 minutes)
  7. 7Stir in Heavy Cream and Parmesan, Add Salt and Pepper to taste
  8. 8Serve over pasta, rice or a grain of your choice
