Cheesey Taco Rice & Beans

Ingredients (10)

  • 2 Cup Brown Rice, Instant (minute Brand)
  • 1 lb Ground Turkey, fresh
  • 1 pkg Taco seasoning ( any brand)
  • 1 Can Beans, black (or your fams favorite kind!) Drained of juices
  • 4oz Salsa, Jarred (mild or meduim)
  • 1 Cup Monterey Jack Cheese, shredded
  • 1 Cup Lettuce, shreded thin (or spring mix)
  • 2 each Tomato, roma, Diced small/ medium
  • 3 Tbls Cilantro, fresh (rough chopped)
  • 1 jar Jalpenos, Pickled (OPTIONAL)


This recipe is something I make my little ones. Its easy, healthy and they enjoy it! It is a basic taco/mexican flavored dish that is easy to prepare, appeals to many ages at the table and is fun for the kids because they get to " build their own"


  1. 1Recipe done all stove top, so no oven temp needed.

Make instant brown rice per instructions ( boiling in water on stove top) and keep covered, set aside.

In a large skillet over Medium-high heat, cook ground turkey until completely cooked throughout and add taco seasoning packet. Lower heat to med-low. Add black beans and jarred salsa to seasoned turkey and stir until ingredients are well combined. Bring to a quick simmer to ensure beans and salsa are hot.

  1. 1Serve each guest or family member a plate of rice topped with the turkey, bean & salsa mixture. Then have the Monterrey Jack cheese, lettuce, tomato, cilantro and pickled jalapenos arranged on dinner table. Everyone can ‘build’ their plate with each topping they choose.
