Ingredients (5)

  • 3 apples
  • 1/3 cup granulated sugar
  • 1/4 teaspoon pumpkin pie spice
  • 1 tablespoon butter, cut into small pieces
  • 2 teaspoons apple brandy, optional

Summary

If you like smooth applesauce, run the end result through a food mill.

Instructions

  1. 1Peel, core and coarsely chop the apples.
  2. 2Combine the chopped apples, sugar and pumpkin pie spice in a 6-cup glass bowl. Stir to mix. Cover with plastic wrap and set in a microwave oven. Cook with 650 watts for 5 minutes.
  3. 3Remove from the oven, uncover and stir in butter and optional brandy. Recover and cook until fruit is completely soft, about 3 minutes.
  4. 4Remove from the oven, uncover and mash mixture with a potato masher. Let cool to room temperature, then chill. Serve with roast pork or pork chops, or with cookies for dessert.
