The SO - frequent slayer of trout and occasional slayer of bass and blue gill - has decided to become slayer of catfish. I think it's the whole hunter/gatherer primal thing or something. Anyhow, it's not bad pan fried in corn meal, but as I'm predicting many dinners like this in the next few weeks I'm open to ideas. FWIW no deep fry, since my kitchen has no exhaust fan (should be illegal). I'm thinking bouillabaisse ...
