What's up with the waitstaff attitude at Fatty Crab?

I've heard so many rave reviews about Fatty Crab that we finally went last weekend.

The food was good, although with some lapses(the crab was overcooked, the spicy pork noodles too sweet). The reason why I certainly will not go back is the waitstaff.

They all had this "I actually play in a rock band but am helping my buddy in the restaurant out" attitude. It was like a bunch of people meeting up to hang out together and have fun and oh yeah, there are some customers there as well, but we'll handle it on the side.

Examples:
They clearly played the loud music just for their own pleasure and were head banging in front of the kitchen counter (no kidding). When asked to turn it a bit down, they did but it only lasted until one of the waiters said "He, put XYZ on, they're awesome..." and we were back to club like volume levels.
We were four people. When the crab dish came, one of the guys brought three plates. When the forth person looked questioningly, he pointed to the plate on the side that had silverware and napkins on it and said "You can take that one...". ??? If this was a burger joint, you might put up with that. But they don't charge burger joint prices.
I could go on. But won't bore you with more details.

I just want to know: Are they always like this or did they just have a bad day???
I liked the food. So I'm disappointed that the waiters can spoil it so much.
