My daughter used to love a dish at a local restaurant that included cellophane noodles topped with shredded carrots, chopped peanuts and a clear thin sauce (with a hint of vinegar), served with small, very crisp fried rolls, but not spring rolls. The restaurant closed, she doesn't remember the name of the dish, and she never had it again.
She'll be in town next week and, since it is her birthday, we'd love to find something similar but I am so out of my league. The restaurant was supposedly Chinese, but was owned by Vietnamese couple who often added other Asian/Southeast Asian specialties to the menu.
