Jason, I appreciate that you are trying to help with your suggestions of veggie Thai cookbooks and all, but you know as well as I do that Thai food is not the same as Korean food, and that, in fact, they have very little in common. I'm slightly perplexed that you would assume one can stand in for the other.
There is plenty of outstanding vegetarian Thai food to be had around here (Portland, ME), and passable (north) Indian, but it won't satisfy a chigae, pa-jun or sundubu jones. Because we keep a veggie household, this was pretty much the case even when we lived in metro NYC, but there I was able to go to restaurants and have non-veggie things. Here, getting actual Korean food requires a car trip to the wilds of Massachusetts.
