Just caught someone, whom I otherwise respect for their gourmet accumen, about to toss away the skin while making a turkey leftover sandwich. Stop It! Yeah, I know, the skin is heavenly when freshly cooked, but icky and leathery the next day as leftovers.
Just take the skin, put 'em into a medium oven for 10-15 minutes until they are nice and crispy crunchy again. Use these to top those leftover sandwiches along with the swiss cheese. And do not forget to add a bit of salt to the cold turkey.
Suggest you go through the leftover turkey and pull all the skin, and save them in a separate container, ready for a refresh for sandwiches.
