Want to treat visiting Mama in Seattle

My mother is coming into town from NJ for a long weekend and I want to take her out somewhere special (and new) for an exceptional meal.

Where we've already been together: Brasa, El Gaucho, Dahlia Lounge, Metropolitan Grill, Cafe Campaigne, Flying Fish, Elliots, Cutters, Il Bistro, the Brooklyn, and the Salish Lodge breakfast.

Now, this should be easy, right? One thinks, Le Gourmand, Campagne, Avenue One, etc. But, she's not to keen on fancy French food. For example, she hated JoJo in New York and didn't find much she liked at DB there either. So that rules out most of those places. She's also not a fan of Indian, Thai, or Sushi.

So, the question is, considering these restrictions, what would those who've been there say about Cascadia (where I'm currently leaning) or Falling Waters? Any other suggestions?
