The link is in English and the information about why the cuisine was awarded this designation is about a third of the way down the article. In a nutshell tho', it's because the cuisine is an expression of Mexican culture that is special because of it's age-old roots, continuity over time and the originality of its products, techniques and procedures. And the fact that as a cuisine it has never been divorced (their term, not mine) from it's cultural context and still plays a role in the life and cultural point of view with communities and individuals today as it did thousands of years ago.
