Suggestions needed for vegetable-centric dish that travels well and keeps well (for funeral)

I do seem to remember reading a good thread on a similar subject a while back, but all the threads I've managed to find through "search" seem to mostly focus on meatier dishes or other heavy pastas. The family has already received quite a few meaty, carby dishes and I understand that something with vegetable content would be very welcome.

I'd like to find a vegetable dish that would survive a four-hour drive in good form. Would y'all please help me brainstorm? My cooking noggin seems to be a little stymied at the moment. All I can think of are oven roasted mixed vegetables (which I've been making quite a lot) and tabbouleh.
