Subs, Hoagies, Grinders, Po'boys

Sandwiches are stuck on my brain this week, particularly of this genre - i.e., on a roll, deli meats and cheeses. I had the Hot Italian Deli sandwich at Pappa Geno's and was underwhelmed, hence the craving.

The usual suspects have arisen: Mandola's Deli, Antone's, Spec's. There must be others but I'm drawing a blank, The Italian Deli at Antone's - ham, mortadella, provolone, salami, pepperoni, lettuce, onion, tomato on a Slow Dough roll is interesting. I presume I could get some of their chow-chow added. Anybody had it. Any other recs/favs.

For the purposes of this thread, I'm not interested in Philly's, Cajun/New Orleans style Po'boys and banh mi - I'm just looking for some nitrates!, deli meats and cheeses types.
