ok I've been paying attention to my roosevelt avenue carts and trucks lately and . . . . highly recommend the quesadilla de suadero from the Sabor Mexicano cart in front of the 74th st / roosevelt ave station; there are 3 carts and this is the one in the middle between El Gallo Giro and another one which I can't recall the name of. Specifically, been chasing suadero in all its shapes and forms and I really really enjoy their version. It is beefy, stringy, chewy yet tender, but also crispy and crunchy and pretty much an amazing texture. it's a dry griddle-kissed prep different from what I had at Los Cuatros Vientos, different from wetter variations I've had prior.

I had the $2 taco de suadero before which they drown in the avocado sauce (not exactly a fan) but I ordered the quesadilla for $3 and it was a huge messy delight. they don't pat the masa fresh for these cuz I saw the guy lift it out pre-made to put on the griddle but the tortilla itself was fluffy and delicious (with crunchy bits), at least 9" in diameter and folded over a gang of delicious meat, lettuce, hard cheese and other bits, with a base of melted stringy cheese underneath it all. throw either the deep-fried chili peppers in, or some of their pickled jalapeno/onion mix; i much prefer their red hot sauce over their salsa verde. They offer about a dozen meats (including tripa, oreja, bucha, goat?) and maybe 8-9 vegetables as well, like squash, mushroom, zucchini blossom) available as tacos, quesadillas, tortas, cemitas, sopes, etc.
