Last night I was able to have dinner with grow_power who family came from the Shanghai area. She had a great deal of knowledge on this style of Chinese food. She and the owner of Chef Ding's in San Mateo was abke to explain to me what Squirrel fish real is.
It is the style of the way the fish is cut and presented to look like a squirrel not always related to a type of fish. The fish we had last night was a catfish. I therefore still think the fish we had at Su Hong was a Steelhead, base on the shape of the head and the spots on saw on the tail. The meal was really good and I am still in the process of writing the post and I hope to make Chef Dings a furture Chowhound chowdown. I sure have the posting up by the weekend.
The fish served was really well presented and the taste was very pleasing to the taste. But more on the meal in the post.
