I wanted to share a recent find. I have been searching for a source for freshly rendered (not shelf stable) duck fat. The sources I originally found were located on the west coast and the shipping made the purchase cost prohibitive. I kept looking and came across this company located in Hamburg, PA.

I was able to order a 7.5 tub for $33.00 and shipping to MA was approximately $13.50. This is in sharp contrast to the shelf stable Rougie Duck Fat from William and Sonoma for $14.95 for an 11.8 oz jar.
I have not cooked with it yet, but it looks good. I plan to store it in the freezer since I won't be using it up quickly enough. The gentleman I dealt with on the phone was very friendly and helpful. The site also offers w wide variety of duck products.
Wish me luck with my first attempts at duck confit at home. Well actually I will probably use chicken since I can get that fresh from a local farm. Then on to duck.
