Just picked up some beautiful skate wings for dinner tonight. I was going to coat them in panko and saute in butter/EVOO, but glancing around online I get the sneaking suspicion that I'm obliged to poach them in a court bouillon instead. Any suggestions for easy recipes? Nothing too overwhelming -- I don't want to disguise the taste of the fish. And would rice or couscous be a decent accompaniment? Or do I need to stick with potatoes of some sort?
