Delightful find at the otherwise over-priced, over-rated Rasapura Masters food court in Marina Bay Sands: May Star produced a superb lard-infused, flavorsome KL-style black Hokkien noodles. Although nowhere approaching the standards of KL-based stalwarts, May Star's version was nevertheless cooked correctly: minced garlic & dried flounder powder sauteed in hot pork lard, followed by cabbage, pork, noodles. More lard, then pork stock, left to simmer. Then, more lard, add dark soy sauce, light soy sauce, shrimps, stir then left to simmer till all the stock were absorbed by the noodles.
The end-product was smoky, porky, glistening with fat, absolutely sinful, with nuggets of golden-crisp fried lardons hidden in the mound of noodles. No liver nor squid in this version though.
P.S. - Thru some quirk of translation, May Star billed this dish as "KL Ancient Hokkien Mee"! ROFL! *Traditional* Hokkien mee would have sounded better.
