I have learned that going "low=gluten" isn't doing it for me. I have to go 100% no wheat, at least for a long while.
I am really enjoying the "Gluten Free On A Shoestring" site as it has lots of bread and pastry recipes. But, she says to always roll out GF dough between sheets of plastic wrap. And I don't use plastic wrap. I don't use disposable plastics at all in my kitchen, so I need a substitute.
Have you ever used two silicone mats to roll out dough? How did that work for you?
