Looking for Seattle Restaurant Suggestions

I am planning to visit Seattle with my family in the near future in conjunction with a trip up to Vancouver. I have a couple of places in mind already, Emmett Watson's for oysters and chowder, Schultzy's for sausages and beer, and also plan to revisit an old favorite, Burgermaster to reminisce.

Besides these places I am hoping to get some recs for the following:

1) Good breakfast spot, pancakes, eggs and hashbrowns.
2) Italian, homestyle red sauce place.
3) Chinese, serving good Cantonese style seafood, steamed fish, clams with black bean sauce, braised prawns, etc.
4) Japanese, good sushi.
5) Steak, could be a steakhouse or a just a good local place that serves a tasty steak.

I haven't decided on a hotel yet, but the Grand Hyatt is a strong possibility. Prefer casual and moderate places with a good dollar value, but am willing to pay more for an exceptional meal. Thanks for your help.
