Who makes the best?
So far my favorite is Udupi Palace in Berkeley.
I have absolutely no clue as to what's authentic, but there's a certain kind of samosa skin/wrapper I've always hated. It's super deep fried (which isn't the sin), but it comes out bubbly and unpleasantly stiff. To my embarrassment, I've always referred to these as the McDonalds apple pie samosas (after the discontinued cholesterol bombs of 20 years ago when I was a teenager and still eating that crap).
Udupi's samosas are more substantial, less flat, and have more of a baked texture to them. The filling is the usual, but delicious: slightly spicy smooth-textured potatoes and peas.
Finally, somebody help me out here. Is the plural samosas or samosa?
