This was served as the feature ingredient in the salad course at our daughter's wedding reception dinner at The Castle in Tarrytown, NY. It was at room temperature, was intensely flavored, and was of the "usual" texture for watermelon. Any ideas on how one would prepare this? I'd welcome guesses if no one has actual experience with this ...
