Mr. Clayton's books have been a great source of information and inspiration for many bakers over the years.
I think his greatest single achievement is "The Breads of France", which was the first of its kind to appear in English and is to this date the most complete English-language book available on the topic.
He was 94 when he died and I was chuffed to see that his most recent publication (a revision) was only five years ago.
