I served this as part of the salad bar for my Derby Day party - several people thought it was jicama - it is so simple it seems crazy but really very tasty.
two large apples - unpeeled
1/4 cup mayo (I used low fat mayo - next time I will try my home made yogurt)
3 TB lime or lemon juice
1/8 tsp salt
1/2 tsp curry powder
I used five apples, peeled them and doubled the dressing - I'm not good at measuring but how could it matter with something so simple. There wasn't much left over but I ate it the next day and it was fine.
