About six weeks ago I posted that I thought Santarpio's was the equal of Sally's and Pepe's in New Haven. Two weeks later I recanted after visiting Pepe's again convinced that their crust was the finest I have had anywhere.
Several days ago I found myself back at Santarpio's a restaurant that I absolutely love the "feel" of. Ordering a half pepperoni, all tomato and cheese I found that the crust was not as good as that which I had six weeks ago. It wasn't quite as crisp, not quite as "blackened." Looking around the room I noted that there was real inconsistency with the pizzas. Some were like mine, others charred perhaps a bit too much. The person I was with had an all pepperoni with a crust that was perfect. I had a slice and this WAS the pizza of my memories.
The topping of both was absolutely delicious. But the slightly crisper crust did make a difference. Two different pies at the same table. If I had the same pizza six weeks ago I would not have been quite as high on Santarpio's as I was.
Still, my conviction that Pepe's is the best because of their incredible crust.
