I apologize if it's already been mentioned, but a quick search yielded nothing so I'll type away.
I passed by Happy Shabu Shabu and its grand opening sign today on my way back from Powell's Place (a lot more chi chi than I thought, given the descriptions of down home food! Definitely a beautiful, cozy, upscale cafe; the people were incredibly friendly and the food was good even at 2pm.)
Happy Shabu Shabu is Korean-Japanese (I assume from the Korean/English menu). The interior is what I describe as Asian-modern--bamboo shoots and quiet streams meet sleek stainless steel and IKEA furniture.
The beef menu: aged prime beef, shintaki and enoki mushrooms, tofu, noodle, and vegetables with two dipping sauce (lunch $11.50, dinner $15.95).
Vegetarian (lunch $8.50, dinner $10.95)
Ginseng Cornish Hen with Sweet Rice and Ginseng Herbal Stuffing (lunch $13.99, dinner $13.99). Someone tell me; is this the famed samgetang? If so, I've been looking all over for it and will definitely go.
Extras: you can get extra beef, vegetables, noodles, etc.
They are closed Mondays
