Report on The Tasting Room at Lola (Dallas) - Long

My wife and I went to try Lola's new concept called The Tasting Room at Lola. The concept is based on small servings of a lot of different courses (16 in our case). I will say in advance that I am a big fan of their regular menu, so I had high expectations. I was definitely not disappointed. The menu for the night was:

1st Group
Cool Cucumber Soup with Peeky Toe Crab and Salad Burnet
Winterpoint Oyster with Champagne Mignonette and Horseradish
Scottish Salmon Tartare and Sevruga Caviar with Sorrel and Meyer Lemon Dressing
Warm Salad of White and Green Asparagus, Truffled Vinaigrette and Sieved Organic Egg

2nd Group
Poached Turbot with Cider-Braised Leeks, Brunoise Potato and Curry Emulsion
Crispy Skin Loup de Mer with Butter Braised Baby Fennel and Parsley Puree
Sauteed Skate Wing with Fondant, Turnip Spinach and Salcornia Beurre Noisette

3rd Group
Seared Diver Scallop with Fava Bean Puree and Oyster Mushrooms
Seared Hudson Valley Foie Gras with Glazed Cippolini and Pain au Lait
Seared Rillete of Rabbit with a Ragout of Morel Mushrooms and Sugar Snap Peas

4th Group
Truffle-Coated Breast of Squab with Celery Root Rosti
Roasted Loin of Colorado Lamb with Puree of Jerusalem Artichoke
Foie Gras Flan with Bitter Chocolate Crisp

Desserts
Fourme d`Ambert with Roasted Beets and Micro Cress
Poached Apricot with Sabayon and Lemon Balm Syrup
Almond Praline Parfait with Caramel Ganache

Our favorites (by group) were the asparagus salad, the loup de mer, the rabbit, the lamb and the praline parfait. The other courses that we thought stood out were the skate wing, the seared foie gras, the squab and the blue cheese. We took 3.5 hours for dinner and were still very full (although we didn't completely finish very many of the dishes). It is available with or without wine pairings (one glass per group of courses). While the wines were good to very good, I would have prefered to order from their regular list (if we would have had more then 2 diners). All in all, an exceptional experience.
