I would like to serve David Chang's Country Ham and Red-Eye Mayonnaise (coffee mayo) as an hors d'oevres. His current presentation does not lend itself easily to the cocktail party atmosphere where guests have only one hand available to take and bite. It is also very basic: country ham flat on a plate with a bowl of mayo.
I'd like a more elegant presentation and I don't mind adding more ingredients if I have to. Any ideas?
