Pork Cutlets: Today Chicago, Tomorrow the World

I don't know whether this is a Chicago thing but Polish butchers (like Bobak's) here sell boneless pork chops that have been run through the cubing machine (like to make cube steak) and that then are called "pork cutlets". The cubing makes them so tender that they melt in your mouth. They fry almost instantly, do well on the grill, and are wonderful in a sandwich. I have had success in getting supermarket butchers to make them for me---just hand them a package of boneless pork chops and smile nicely. Pork cutlets deserve to be better known.
