I finally tried Piola on 12th street between Broadway and University the other night and I'm hooked! This is as close to Italy as it gets, even though it's a chain from South America (go figure!). The crust is thin, baked in a fire (or it tastes like it). Everything about these pizzas is subtle -- not smothered in sauce and cheese and toppings -- and their selections are endless. Everything's so fresh! I recommend the one with the prosciutto and arugula, and the one with spicy soppressata, mozzarella and gorgonzola. I've made it my goal to try all of them!
