The Perfect Soft Shell Crab

I had it last night at Lumiere in West Newton. It was very expensive ($15 appetizer) but I know there was a recent string on this subject and if price is no object this is what you're looking for. The details - one fairly large peeler very lightly dusted in some sort of delicate cornmeal crust and cleanly fried, no hint of grease or oil, perfect balance between crunch and juicy, set on a refreshing bed of green papaya salad with a little (superfluous) fresh tartar sauce on the side. BTW, the rest of the meal and service was very good but the crab was the winner.
