I have scoured the Internet, Trader Joe's, and Whole Foods for organic chipotle peppers in adobo sauce, and they do not seem to have them. I cannot find them in a jar either. I don't want to have to restore to smoking my own jalapeños (although I do grow my own) , but I guess I would consider it if no other options are available.
Peppers are on the dirty dozen and these imported cans are almost sure to have BPA, so it's a double whammy.
I have read abut the trick of liquid smoke, tomato paste / ketchup, and jalapeños, but the depth of flavor is just not there. And adding dry chipotle spice to tomato paste doesn't quite do the trick. But I could be missing a component to make these work-arounds actually work.
Does anyone know of a brand or a solution?
