Orange County Opinions Please

My fiance and I are going to be celebrating our anniversary on March 15 and are looking for a new (or at least one that we have not been to) restaurant in Orange County to enjoy a delicious dinner at. After all, eating out is our official "hobby." Anyway, we would appreciate some recommendations and input from fellow Chowhounds. Price is generally no object, but I think the Ritz and St. Regis restaurants may be a little too expensive. Some of our favorite restaurants include Pascal, Pinot, and the Golden Truffle. While they are all very good, we are stuck in a rut. Some places we have thought of are Napa Rose, Aubergine, and Troquet. Any opinions on these? We want to go to a restaurant on the quiet side-no rowdy kids and babies crying. We are open to all types of food, but it must be excellent. We also don't care whether the scene is "trendy." Lastly, we have been to all of the major steakhouses in OC (Morton's, Ruth's Chris, Fleming's, and Savannah Chophouse) so unless you can think of anything better, those are definitely out. Thanks for your help!
