What's Open and Great on 4th of July in Portland?

Hey There-

I'm in the final stages of planning for a trip to Portland over 4th of July weekend. I've got some great meals planned to sample the varied and interesting food Portland has to offer. We're staying at the Westin downtown. Planning to eat lunch for carts for the most part. We'll have dinners at Pok Pok, Paley's Place, Toro Bravo, Tanuki, maybe Biwa, My challenge looks like the 4th of July. We're planning to head to Mt. Hood that day for outdoor recreation. In the morning, we'll hit Wong's King for dim sum. We'll return to the city in the late afternoon. We're looking for a place for dinner and at this point, I've tried Toro Bravo, Pok Pok, Metrovino, Apizza Scholls, and Paley's Place. All will be closed. I understand that it may not be a big night out for restaurants. We like to eat between 5 & 6 usually. I'm concerned that many of the downtown carts will be closed as well.

Any suggestions for exceptional dining on the 4th? I don't want to eat chain food or eat in a hotel if I can avoid it. The place should serve alcohol. Otherwise, I'm open for tips.
